COCONUT OAT MANGO

Have a refreshing day with this quick recipe made tastier with 7x more fiber (per 100g vs. long grain white rice)!

Ingredients
  • 1 cup Quaker Rolled Oats
  • 2 cups Water
  • 1⁄3 cup Full fat coconut milk
  • 1⁄4 cup Milk (can be oat, almond, soy or coconut)
  • 1 tbsp Coconut sugar
  • 1 tsp Vanilla extract
  • 1⁄4 tsp Sea salt
  • Toppings (optional)
Procedure
  1. Set your can of coconut milk in the refrigerator overnight to help separate the creamy part from the watery part. You will only need the creamy part.
  2. Bring water and salt to a boil on the stove. Once boiling, stir in Quaker Rolled Oats, coconut sugar, and vanilla, and reduce heat to medium. Allow to cook for 15 minutes, stirring occasionally.
  3. Meanwhile, prep mango cubes.
  4. After 15 minutes, reduce heat to low and stir in milk of choice, full fat coconut milk cream. Top with extra mango sliced, shredded coconut and a drizzle of honey (optional), serve and enjoy!
